Old Fashioned Cooking with Darlene
This is a beautiful cookie recipe that I got from my aunt. They are crunchy and full of flavour and it is so easy to “dress
them up” for the holidays by adding in cranberries and walnuts, or whatever fruit and nuts you prefer. These cookies
won’t stay in the cookie jar for long!
Crunchy Oatmeal Coconut Cookies
Ingredients
1 cup butter or margarine
1½ cup brown sugar
2 large eggs, beaten
1 tsp vanilla
2 ¼ cup flour
½ tsp salt
1 tsp baking powder
½ tsp baking soda
1 ¼ cup oats
1 cup flaked coconut
